And with deep roots in Austin that date back to its first store in 1971, the company is making plans to turn up the volume on its Austin-ness. In the next 18 months, the company will reimagine its entire 350-store portfolio.
The concept gets a new moniker – Schlotzsky’s Austin Eatery. New signage, better food, and beer and wine are part of the makeover that aims to squarely position the concept as a hip, fast-casual destination.
Interiors will get a complete revamp – think mismatched Texas yard-sale chic for the fixtures, seating and service ware. Bright colors, big prints and large decorative signs complete the look, along with local indie sourced music aimed squarely at the millennial audience.
The company has 18 units currently sporting the new look, with the entire project slated to wrap up by the end of 2019.
